Black Truffle Frittata
The mild flavour of eggs is great with the subtle flavour of all kinds of truffles
1 small truffle, finely sliced
3 eggs, sea salt and black pepper to season
1 tsp butter
Gently preheat a small pan with the butter – beat the eggs and add the salt, pepper, truffle and lemon juice
Pour the egg mixture into the pan. Swirl and egg around the pan so the omelette is evenly spread. Lift the edges of the omelette as it begins to cook so it doesn’t stick (even using a non stick pan)! Don’t overcook your omelette……
